Chef Chantelle Nicholson is continuing her meteoric rise in the culinary world with her appointment as chef patron of Tredwell's in London's Covent Garden.

Nicholson will also continue as group operations director for Marcus Wareing Restaurants alongside her new role at Tredwell's, the casual dining restaurant which the company launched in September 2014. She will also retain her role as head chef at Tredwell's, which she took on following Andrew Ward's departure in May last year.

Announcing the appointment, Marcus Wareing Restaurants said Nicholson has been "the driving force" behind the launch of Tredwell's. It added that her progress since joining the company in 2004 "set her apart as a remarkable talent in an industry traditionally associated with men and a source of inspiration to women across the UK."

Nicholson will continue to create dishes at Tredwell's using high quality, seasonal British ingredients. Typical dishes include Scottish scallops with buttermilk, lime and green chilli salsa and Dorset turbot with caramelised cauliflower, fennel pollen and samphire.

She will also oversee a new bar offering and develop the live music and private event opportunities at Tredwell's.

Commenting on Nicholson's appointment, Marcus Wareing said: "Chantelle came to me as a young dynamic individual who wanted to make her mark on this amazing industry we work in.

"Her ambitions have always been quiet but she is incredibly driven. Chantelle is the consummate professional, and she is a very, very talented chef. An incredible eye for detail, she is also an astute business woman and always pushing herself to the next level.

"I am delighted to see Chantelle take on the role of chef patron of Tredwell's and I look forward to continuing to work closely with her to further enhance the Tredwell's offering."

Nicholson, who is originally from New Zealand, said: "I am totally delighted to be taking on the role of chef patron of Tredwell's. Having being so involved in every step of Tredwell's so far, it already feels like an extension of me and I am hugely excited about its future and our plans to ensure its lasting legacy for London's West End."
Nicholson, who gave up a career in law to train as a chef, added: "I also want to use this opportunity to shine a positive light on the industry and show what an exciting and rewarding career path it offers to all. I really want to use my experience to inspire young chefs and female chefs in particular, to nurture them and help develop them into the leading stars of tomorrow."

Originally founded in 2008, Marcus Wareing Restaurants now includes the two-Michelin-starred Marcus at The Berkeley Hotel in Knightsbridge; The Gilbert Scott in the St Pancras Renaissance Hotel; and Tredwell's.

Nicholson was the winner of an Acorn award in 2009 and in 2010 acted as an Acorn Awards judge. She started out doing a law degree, then worked in banking before following her heart into cookery. She was discovered through the Gordon Ramsay Scholarship competition after which fellow Kiwi, Josh Emmett, then of the Savoy Grill, offered her a job in London.

Today, she will be addressing the latest crop of Acorn Awards winners at an exclusive Acorn Awards event at Chewton Glen in the New Forest.
