Beer of the week: The Rising Single Malt Irish Whiskey, 47% ABV, 70cl — €75

A limited edition whiskey (1,916 bottles) from Tipperary Boutique Distillery founded by Clonmel farmer Liam Ahearn and his fiancée Jennifer — with blending and selection refined by her whiskey expert father Stuart Nickerson.

Tipperary Distillery is not yet built so this is merely a hint of what they hope to produce themselves. Just six (bourbon aged) Irish whiskey casks were sourced with a minimum age of 11 years.

Aromas of honey, barley sugar and a background of vanilla — supremely smooth on the palate with touches of citrus, chocolate and a creamy spicy finish. An excellent beginning!
