Two Michelin-starred chef Philippe Léveillé.

Born in Nantes, France, in 1963, Léveillé worked in a number of fine restaurants including in Paris, New York, Martinique, Monte Carlo and finally settling in Italy. He joined the Piscini family working at the Miramonti di Caino restaurant in 1992 and subsequently founded the Miramonti L'altro in 1994 in Concesio, Brescia. The restaurant was awarded two Michelin stars in 2001, a status which Léveillé has retained for the past two decades. He is known as a celebrity Breton chef in Italy, best at combining French cooking techniques with traditional Italian fare.

During his five-day residency at Jojo, chef Léveillé will present a special menu consisting of appetisers, mains and desserts inspired by the signature dishes at his two-star Marimonti L'altro. They include frozen biscuit of red prawn, oyster and mango mayonnaise; seafood soup with liquid seaweed; spaghetto black tea with fermented garlic; charcoal pigeon, calamari and chorizo, foie gras and shellfish sauce; study of saffron risotto textures "Milanese style"; and cereal and hazelnut paste "Cappuccino" and mascarpone, cocoa biscuit and lukewarm coffee foam.

Two dinner menus are available -- seven courses at 6,000 baht (7,900 baht with wine pairing); and nine courses at 7,000 baht (9,500 baht with wine pairing). An exclusive 10-course wine dinner on April 1 is priced at 9,750 baht. A three-course lunch menu with wine pairings is also available for 3,500 baht.
