One Aldwych diners fail to notice menu changed to gluten & dairy free


The executive chef at London's One Aldwych hotel has revealed that he created gluten- and dairy-free à la carte lunch and dinner menus three months ago, and diners have yet to notice.

Dominic Teague (pictured), who heads up Indigo restaurant within the Covent Garden hotel, told the Evening Standard that he worked on his new menu over several months after noticing a major uptake in diners who wanted gluten and dairy free dishes.

The chef knows first hand how hard it can be when eating out for those dealing with food issies as his wife is intolerant to gluten and his mother to dairy.

He said that the most challenging items were the bread, the fish and chips and the chocolate mousse. He went on to develop a samphire and onion bread made from buckwheat flour, and his dairy-free chocolate mousse is made with coconut oil.

Teague, who is formerly of the Lanesborough Hotel and Marco Pierre White’s L’Escargot, is one of the first in the city to have their entire lunch and dinner offerings free from gluten and dairy.

The hotel also offers a vegetarian, vegan and gluten-free afternoon tea, which was also conceived by Teague.
