Lamb Majorca

Lamb dish cooked to perfection. INGREDIENTS6-8 lamb chops60g ( cup) cake flour, seasoned with salt and pepper30ml (2 tbsp) olive oil1 large onion, sliced125ml ( cup) lamb or beef stock125ml ( cup) white wine (or use extra stock)5ml (1 tsp) dried mixed herbs1 red pepper, seeded and sliced1 large orange, peeled and segmentedLarge handful stuffed green olivesHandful fresh parsley, chopped, for servingMETHODCoat the lamb chops in seasoned flour.Preheat the oil in a large, non-stick pan, brown the lamb on both sides and set aside.Fry the onion in the same pan till soft.Return lamb chops to pan with stock, wine, herbs and extra seasoning.Cook till just tender, then add the red pepper slices, orange segments and olives.Heat through for about 10 minutes. Serve.Serves 4...
