The Epsom and Irish Derby winner took the lead in the final furlong but the French Derby winner, who was superbly ridden by Ryan Moore, got up to win by a neck.
The Aidan O'Brien-trained Australia went into the race as clear favourite for what was billed as a rematch between the two after Australia had beaten The Grey Gatsby in the Juddmonte International at York, however the latter gain a memorable victory in a dramatic finish.
There was no hurry or indication of the drama to unfold during the early stages, as Australia's pacemaker Kingfisher and the Hamdan Al Maktoum pair Alkasser and Mukhadram formed a leading pack.
Moore and The Grey Gatsby were initially some four lengths behind his nearest rival, who happened to be Australia, who had opened up a clear lead under his regular rider Joseph O'Brien. As at York when Australia beat The Grey Gatsby in the Juddmonte International, the gap looked too much to recover from, but on this occasion it was bridged as one horse faltered and the other fought back.
Australia’s jockey Joseph O'Brien was forced to go quite wide around the home bend, while Moore saved ground on the inner and used that momentum to take him on.
In a frantic race to the line, Moore had O'Brien in his sights and his mount responded to the target, edging ever closer to Australia then sneaking by for a famous victory for owner Frank Gillespie and trainer Kevin Ryan.
Trading Leather claimed third place some four and a half lengths behind Australia.
Winning trainer Kevin Ryan said that he went into the race convinced that his horse would "go very close" to upsetting the odds-on favourite.
"Richard Hughes [The Grey Gatsby's jockey in the Juddmonte International] said at York that Australia just got first run on him," said Ryan.
"On the day I don't think he would have beaten him, but Hughesie thought he would have been a lot closer and given him a harder race.
"Today we had him in a little bit better shape as we were always conscious of this race.
"Turning in, I was thinking he had a lot of ground to make up, but in fairness to Ryan he was saving ground while Australia had to go wide."
Moore said: "My horse is improving and he was impressive in France and very good in the Juddmonte. I thought Australia would be hard to beat but that mine would come on for York.
"They went a good gallop but my horse tries really hard. He travels well and you just have to give him a target to aim at and he'll chase it.
"They both ran a good race to pull clear like that. Hopefully mine can improve a bit more."
Ryan said that The Grey Gatsby will not compete in next month's Prix de l'Arc de Triomphe at Longchamp but the Qipco Champion Stakes Champion Stakes at Ascot two weeks later could be the next target.
"He won't go for the Arc. He might go to Ascot for the Champion Stakes if he runs again but he stays in training next year when he'll start off in the Duty Free in Dubai."
Also on the card at Leopardstown, Bow Creek held off pressure from a fast finishing Mustajeeb to win the Clipper Boomerang Mile.
The Mark Johnston-trained colt was trailing in second for much of the contest but as long-time leader Leitir Mor began to fade Bow Creek took up the running and responded well to Joe Fanning's asking in the final furlong, keeping the Dermot Weld Mustajeeb at bay to win by half a length, with Gordon Lord Byron coming in third.
Weld had better luck in the Group 3 KPMG Enterprise Stakes as Free Eagle demolished his rivals to win by an emphatic distance of seven lengths.
The three-year-old was last seen being beaten into second by Australia in the Juvenile Stakes over a year ago, but no one could live with the turn of foot shown by the colt on his return to action. The winner travelled in midfield before soaring past the long-time leader and stablemate Rock Critic, with Elleval coming in a distant second and Chance To Dance back in third.
In the Coolmore Fastnet Rock Matron Stakes, Fiesolana gained a first Group 1 win for herself and trainer Willie McCreery.
Ridden by Billy Lee, the oldest runner in the race was sat behind a wall of rivals before she forced her through a narrow opening when the moment came to win. Race favourite Rizeena was second and Tobann third, with the much-fancied Yorkshire Oaks winner Tapestry coming in a disappointing ninth.
