Summer morning margarita

Ingredients

Sugar: 1/2 cup

Water: 1/2 cup

Orange zest: 3 strips

Seeded watermelon: 2 cups, cubed

Tequila: 3/4 cup

Lime juice: 1/4 cup

Salt or sugar for rimming glasses (optional)

Method

Mix 1/2 cup sugar, water, and orange zest in a pan and bring it to boil, stirring constantly. Let it simmer till the sugar dissolves. Remove from heat and let it cool completely.

Puree water melon cubes. Sieve it and set aside. In a large pitcher, mix watermelon puree with sugar syrup, tequila and lime juice. To rim the glass, rub the edge of margarita glasses with a lime wedge.

Place a small amount of salt or sugar in a saucer. Lightly dip the rim of the glass into the saucer to rim the glass; tap off excess salt or sugar. Fill rimmed glasses with crushed ice; pour margarita mixture into glasses and garnish with lime wedges to serve. To make it without margarita, use a fuzzy lemonade in place of tequila. Serves four.

Ginger–honey Iced tea

Ingredients

Boiling water: 8 cups

Tea bags: 8

Freshly grated ginger: 2 teaspoons

Honey: 1/3 cup

Method

Pour 8 cups of boiling water into a heat-resistant pitcher.

Add 8 tea bags and let stand for 10 minutes. Discard the bags and allow the tea to cool. Mix in the honey and ginger and refrigerate until ready to use. Serve over ice. You may strain the tea mix if you do not like the ginger bits while drinking.

Bruschetta

Ingredients

French bread: 1 loaf

Olive oil: 1/4 cup

Salt: 1 pinch

Tomatoes: 3

Basil leaves: 1 sprig, finely chopped

Grated parmesan cheese: 1/4 cup

Method

Slice bread into 1/2-inch slices on an angle. In a shallow dish like a pasta dish, pour olive oil and dip bread slices into it.

Place these slices on a baking tray. Sprinkle very little salt on these slices (remember, very little). Cut the tomatoes in quarters and remove all of the seeds.

Chop the tomatoes. Mix together basil leaves and chopped tomatoes. Place the chopped tomatoes mix on the slice.

Sprinkle grated parmesan cheese.

Bake for just a minute or two.

Don’t over-bake; it may get burnt quickly.
