The Pata Tim is a slowly-braised pork pata, so tender that the meat falls off the bone. It is served in a thick, flavorful sauce with vegetables and shiitake mushrooms. Another must-try is the chicken-version of the Pata Tim. The Chicken Tim is a   ‘lighter’ alternative to the pork pata that is also served with vegetables in the same sweet-savory sauce.
