How about butter-less chicken for a change!

Traditional North Indian dishes, which are known for their use of vegetables oils including mustard and peanut, are facing a radical modification with eateries in Delhi shunning the age-old use of fatty substances, in a bid to cater to health conscious customers.

  According to some of the restaurants and eateries that spoke to Metrolife, people are increasingly becoming more and more health conscious but at the same time they would not like to deprive themselves from the pleasure of eating their favourite food items.
The Yoga Cafe for example, is one such unit which serves healthy vegan and gluten-free food. An initiative by two sisters Sheetal and Mona Madan, the Yoga Cafe became operational just a year ago, but has been gaining prominence in parts of South Delhi.

“We don't use dairy products, wheat and sugar. But we also have to keep a check on whether our customers are enjoying the food which is being served to them. There is a lot of demand for traditional food items and we have to constantly innovate,” Sheetal Madan told Metrolife.

The cafe, which is more like a takeaway kitchen now, uses jaggery instead of sugar in traditional Indian sweet dishes. In biryani’s, brown rice is used instead of the white one.
Taking a cue from the growing demand of healthier foods, elite establishments have also started to rethink their menus. Dhaba, a restaurant in Claridges Hotel of Delhi has paved way for other establishments to ‘modify’ traditional food items. 

While Butter Chicken might have been renamed Butter-less Chicken and Dal Makhni to Dal Makhni Nahi, the management of Dhaba promise their guests that the preparation of these ‘healthier dishes has not compromised the authenticity of traditional north Indian dishes’.
“Guests can now enjoy their favourite dishes with less of the oil and butter. Dishes like Butter-less Chicken, Dal Makhani Nahi, Lasooni less-oily Palak, and Amritsari Tandoor-ast Fish feature the new menu of our restaurant,” the management told Metrolife.
“The chicken and dal without the butter are not only healthy to eat but they also set a certain trend for consuming healthier food. It’s time to shed calories off your food instead of worrying about shedding your weight after,” the management added.
