Bistro 5 chef cooks for the Dalai Lama

Vittorio Ettore, the chef/owner of Bistro 5 and A Tavola, is not easily impressed. He's cooked for celebrities in the past — Quincy Jones, Kelly Clarkson, Adam Levine, Michael Bloomberg, Henry Louis Gates Jr., and Renee Russo, to name a few — and rarely, if ever, was his heart aflutter. But the Dalai Lama is a different story. While His Holiness was in Boston last week, Ettore was asked to prepare lunch for him (and his entourage) at the Wang Theatre. He won't reveal exactly how he got the gig — "I practice yoga and I have friends and connections" — but says it was an uncommon experience. "I wasn't nervous about the food part of it," Ettore told us. "It was being in the room and doing the right thing and being respectful." He made two dishes — meat and vegetarian — but isn't sure which the Dalai Lama chose to eat. When he was done, Ettore personally delivered dessert and said hello. "He held my hand and it was such an emotional experience. I didn't know if I was going to laugh or cry," he said. "He actually squeezed my hand — in a good way." In case you're wondering, yes, there was a picture taken, but Ettore hasn't seen it yet. "I can't wait because I want to see the expression on my face."
