Opened in September 2014, Pachamama is London’s newest addition to the Peruvian restaurant scene, with a British twist. Pachamama draws on the culinary diversity of Peru, producing dishes that reflect the spectrum of influences in Peruvian cuisine using the finest of locally-sourced, seasonal British produce.
The menu is designed for sampling and sharing and will consist of small plates, main dishes and substantial plates for the table to share. The menu exhibits Peruvian flare, flavours, techniques and presentation alongside classic British flavor profiles. Dishes will include salmon with watercress, horseradish, beetroot with bleeding tiger’s milk; whole Cornish lobster with a herbed butter sauce and truffled purple potato salad; and grilled Brussel sprouts with squash, heritage carrots, salsa criolla and shaved Berkswell.
The kitchen is led by Head Chef Tom Catley who has previously been Head Chef of Ottolenghi, Restaurant Nathan Outlaw, Peyton and Byrne; worked a stage at Amaz in Peru; and been Senior Chef de Partie at Rick Stein’s Seafood Restaurant and Chef de Partie at Nobu Park Lane. His open-kitchen includes a Josper oven and Robata grill to keep flavours punchy and authentic.
The 16-seater cocktail bar mirrors the philosophy of the kitchen – Peruvian classics combined with British ingredients, home-infused Pisco with seasonal berries and herbs and a well-crafted list of South American wines and British bubbles. The bar will serve creative cocktails using the best small British distilleries of vodka and gin as well as locally-brewed beers.
Central to the Pachamama philosophy is the supporting of independent artisans: fish and game are supplied by Celtic Fish and Game, a small family-run business in Cornwall and the artwork on the walls sourced from young photographers around the world.
Inspired by the imagined aesthetic of a faded colonial home, lived in by an eccentric Peruvian family, the interior will include furniture from British craftsmen as well as reclaimed antiques, with a colour palate drawing on the brighter pastels of Peruvian design.
The space sits 120 covers, spread across 2 main dining areas, 3 private dining rooms and a 16-seater cocktail bar.
